Aristargos 2021 consists mainly of Chenin Blanc and old grape varieties (Chenin Blanc, Sémillon, Clairette Blanche and Colombar), and the focus remains on the granite soils of the Paardeberg. Chenin Blanc comes from the flat slate soils of the Paardeberg and the iron-rich clay soils west of Malmesbury, it is grown together with the Viognier, Marsanne, Roussanne, Verdelho and Grenache Blanc grow on the iron-rich clay and slate soils in Swartland. Colombar was also added. The vines vary in age from 1960 to 2013, and the grapes were pressed as whole bundles, fermented naturally and then aged in old neutral French oak barrels for 11 months. The grapes from the Sémilllon were fermented on the skins for a week before they were pressed and aged in a very old 2,500 liter barrel for a year. The Colombar was also fermented on the skins (for 5 days) and aged in an old oak barrel. Part of the Chenin Blanc fermented and matured in a concrete egg. In total, grapes from 19 different vineyards were used, which were harvested on 19 different days.
