Tasting note
The nose shows delicate aromas of red berries, cherries, yellow plums, juicy pome fruit and some citrus fruit, underpinned by delicate floral notes and subtle minerals. On the palate, dance-like, delicately fruity, with elegant perlage, lovely freshness and fine spiciness.
Culinary recommendation
Wonderful as an aperitif with friends, with a few delicious appetizers, such as gougères or a delicious quiche, but also with light fish and vegetable dishes.
Vinification
This Crémant de Bourgogne - Méthode Traditionnelle - is a so-called Blanc de Noir and is made from 100% Pinot Noir. The grapes come from a single vineyard of just 0.8 ha. The basis is the 2021 vintage, which fermented with indigenous yeasts in steel tanks and was allowed to age in the bottle for over two years before it was disgorged.
