The Crémants d'Alsace are made from Alsatian grape varieties, either in pure form or as a blend. The grapes, which always come from AOC grape varieties, are picked at the very beginning of the harvest, so that the exact moment can be tapped when they promise the greatest balance and the finest harmony. The Crémants d'Alsace are produced according to the traditional method and turned upside down every day so that the depot accumulates in the bottleneck. In this way, they patiently mature to the point of dégorgement, the removal of the yeast base.
