About the wine

Aimé Sabon founded the Domaine in 1967. With the region, Domaine de la Janasse has risen to the top, where it is now an integral part of the new generation Christophe and Isabelle Sabon. In the small appellation of Châteauneuf-du-Pape alone, the estate has almost 20 ha of vineyards with mystical grape age, from Grenache to Mouvèrdre to Syrah, there are 100-year-old vines. A treasure that is cultivated here, the farming is organic and there is only minimal intervention in the cellar to let the unique terroirs speak for themselves, spontaneous fermentation, no filtration, hardly any new wood. The wines are fascinating unique, with an original, classic vein and noble elegance, with wonderful freshness and comparatively low alcohol levels for the region. Châteauneuf-du-Pape straight out of a picture book, without sweet excesses. World class!

Sacred thanksgiving - from the dark depths to light, as after a serious illness, calm strength, clarity, confidence, rising dark fresh berry fruit, later also light fruits, almost radiant, light in the dark, ethereal, everything here seems calm despite freshness, light despite dark depth, light regardless of dense intensity, warm despite cool elegance. On the palate, elegance and clarity, fresh, dark fruit, gentle striving, very prudent, fine dark minerality and a calm, bright joy, yeasty, fresh, medicinal against a sweet, warm background. Fantastic, this gently blossoming joy and elegance!

Flaschenpöstler-Tipp: Chateauneuf du Pape passt ideal zu Barbecue, Wild und geröstetem Gemüse. Unsere Empfehlung: Die perfekte Trinktemperatur für den Bio-Rotwein liegt bei leicht gekühlten 16°-18°C. Im folgenden Zeitraum liegt die empfohlene Genussphase dieses Weins: 2016 - 2025.
Vinification
Selective reading by hand. Fermentation of mainly destemmed berries with the vineyard's own yeasts, aging and long maturation partly in concrete tanks, partly in oak barrels, unfiltered.
