Tasting note
In the glass of intense purple color. On the nose, notes of candied fruit and wood strengthen. A great amount of fruit on the palate. The tannins are silky soft and the aftertaste is memorable thanks to its spiciness.
Culinary recommendation
Goes well with game, beef, mushrooms, grilled meats and fine cuts of meat.
Vinification
Sorted hand picking, selective untrapping. Traditional vinification of 25-30 days with several cycles to accelerate the extraction of dyes and tannins from the berry skins. The wine is then aged for 12 months in large Demi-Muid (600 liter oak barrel).
