Vinification
Sauvignon develops ideally on calcareous soils. Native to the Loire, it loves a temperate climate. Warm summer days and cooling winds in the evening promote the full development of grape aromas. The vines are rigorously pruned in winter. So a “green harvest” is hardly necessary. 600g/m² are harvested.
