Culinary recommendation
Goes well with ham, terrines, poultry liver, grilled mushrooms, risotto with truffles, tuna with herbs, T-bone steak, chicken breast with lentils, lamb curry, veal kidneys, ravioli with meat filling, venison, fried chicken with mushrooms and mildly spicy cheeses such as Comté, Emmentaler, Gruyère, Tilsiter, Tomme de Savoy and Gouda.
Vinification
For the SÉLÉNÉ cuvée, Divico grapes are selected from the best individual vineyards on the estate. The quantity harvested is very limited. The unique quality of grapes results from consistently implemented, sustainable management. For each plot, the grapes are picked by hand in accordance with the optimum degree of ripeness, sorted out and brought to the cellar in small containers. A second sorting takes place there. After fermentation of approximately three weeks, the wine is aged on fine lees for 12 months in barriques.
