Tasting note
Dark purple with purple reflections. On the nose, red and dark berries, cherries and subtle roasted aromas. On the palate, multi-faceted, classic, cedars, noble wood, dark berries, very elegant with a strong structure. Long finale, with good potential.
Culinary recommendation
Goes well with braised and grilled beef and lamb, game dishes and aged cheese.
Vinification
The grapes are picked and sorted by hand. The gentle pressing is followed by fermentation of one third in steel tanks, cement tanks and wooden barrels for two to four weeks. Each type of grape is fermented separately. The wine then rests in French barriques for 16 to 18 months. 30 to 60% of the barriques are new, depending on the vintage.
