About the wine
The Livon family has been growing wine for more than half a century and now owns over 200 ha in Friuli, Tuscany and Umbria. Since the mid-90s, Villa Chiopris has also been part of it. Without the great commitment of the Livon family, the magnificent estate would not shine in the middle of the vines and the wines would not get our attention. Villa Chiopris is full of hospitality, charm and openness, and so are the wines.

Tasting note
Das erfrischende Bukett des Chardonnay DOC von Passionsfrucht, Pfirsich und Mandel zeigt komplexen Aromacharakter und viel Finesse. Die dominanten Noten von Zitrone, Limette und Apfel gestalten ihre individuelle Textur. Ein fruchtiger Weisswein mit schlankem Körper und dominanter Säure, welcher auf Zunge und im Gaumen seine komplexe Struktur entfaltet.
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Chardonnay DOC harmoniert ideal mit Geflügel, Weichkäse und Geisskäse.
Vinification
Die Vinifikation fand wie folgt statt: Nach einer sorgfältigen Handlese werden die Trauben für 8 Stunden eingemaischt und bei kühlen Temperaturen in der Waagerechtpresse mazeriert bevor die Maische gekeltert wird. Die Gärung erfolgt in Stahltanks bei einer kontrollierten Temperatur von 15°C. Nach der Gärung verbleibt der Wein noch für etwa 5 Monate auf der Hefe in den Tanks bevor die Flaschenfüllung erfolgt.
