Tasting note
This rosé champagne is presented in an elegant rosé tone and develops aromas of red berries, accompanied by floral notes and a fine note of yeast. On the palate, it is fresh, balanced and with a pleasant minerality.
Culinary recommendation
Ideal as an aperitif or with light appetizers such as salmon tartare, sushi or goat cheese.
Vinification
The grapes come from two old vineyards, “La Brusse” (planted in 1984) and “Les Pierreuses” (planted in 1992), which grow on clay, limestone and gravel soils in the municipality of Baslieux-sous-Châtillon. The grapes are traditionally pressed and the wine ages on the lees for over 40 months, without dosage, resulting in Brut Nature.
