Tasting note
Fine, elegant perlage. On the nose, citrus fruits, white flowers and a touch of brioche. Fresh, precise and mineral on the palate with lively acidity, fine creaminess and a salty, long finish.
Culinary recommendation
Goes well with oysters, ceviche, zander fillet with lemon butter, sushi or fresh goat cheese.
Vinification
Handpicked, gentle pressing, fermentation in stainless steel tanks and partly in wood, aging on yeast with regular batonnage. Bottle fermentation and maturation on the yeast for approx. 5 years before disgorgement.
