Chablis Saint Martin is an assemblage of the best plots of the Domaine Laroche. Thanks to the selection of different sites, this wine shows the diversity and richness of its origin; it reflects the minerals of the Kimmeridium, the chalky soil of the region.

Vinification
When vinifying, the aim is to produce as natural a wine as possible, which preserves the complex aromas and character of the terroir. The fermentation lasts 21 days at 17°C in stainless steel tanks. The wine then ages on its fine lees, also in stainless steel, for 8 months
