Tasting note
Impenetrable purple in the glass. On the nose, deep aromas of black fruits and dark earth, licorice and black pepper. Concentrated on the palate, with lots of dynamism and freshness as well as a distinctive, fully integrated tannin and acid structure.
Culinary recommendation
Goes well with fine cuts of meat, mushrooms, stews, game.
Vinification
Hand harvesting and double selection. The grapes are fermented with ambient ovens at temperatures of 28 degrees for 15 days. This is followed by a 30-month aging in new and used French oak barrels.
