Tasting note
The Catalan family estate Mas Comtal produced cavas for generations, but as the market was increasingly flooded by the gigentes Codorniu and Freixenet and prices collapsed, they decided to switch to dry red and white wines. Since then, leaving the DO has prohibited them from producing CAVA. However, they are allowed to produce sparkling wines as table wines under the DO Penedes. According to the old “CAVA” tradition, hand-shaken and stored for at least 24 months before disgorging. >2030
