About the wine

More than 1000 years ago, the walled vineyard on the slopes of Auxey-Duresses was planted by monks and cultivated for centuries until much later, in the shadow of the very large appellations, the great potential was neither seen nor exploited. Only since the Andrieu family purchased the estate in 2008 (today over 15 ha), committed themselves to a long tradition and relied uncompromisingly on organic and biodynamic farming, has the terroir revealed itself again in all its facets. Bees, sheep and horses instead of heavy equipment and chemicals. “Nature first” even in the old cellars, where wines are made under Willy Roulendes and are not made, no only briefly enchanting flawless fruit smiles, but the entire terroir of the mythical locations fascinates for a long time.

Tasting note
Föhnwind - blows so gently out of the glass, so vegetable-fresh and yet so dry and warm, yellow to orange, ripe, sweet orange fruit, nutty, slightly dusty, and yet as much spring as it all smells, full and juicy. On the palate as delightfully soft, softer than expected, like a warm, comforting and freshly blowing wind, everything so gentle, so soft, the ripe yellow fruit, so playful and so pleasantly fresh, just gently tart spice, tobacco, lime, and how far it carries, that warm soft wind. It's great to be blown around here in a warm and soft yet invigorating way!
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Bourgogne Blanc Clos de la Perrière Monopole AOP harmoniert perfekt mit Geisskäse, Spargeln und Weichkäse.
Vinification
Very selective reading and sorting by hand. Slow fermentation with the vineyard's own yeasts in wooden tanks, aging for 12 months in smaller oak barrels (up to 400 l, max. 15% new barrels). Unembellished, unfiltered, minimally sulfurized.
