Tasting note
Brilliant, clear straw yellow. Intense and delicate on the nose, with aromas of fresh fruit, such as peach or pear, but also floral and mineral notes. Balanced acidity and medium body on the palate. Complex aromas of citrus, peach, herbs and mineral notes.
Culinary recommendation
Goes well with fish, poultry, cheese.
Vinification
Classic fermentation in steel tanks. Subsequent aging in two batches for 5 months. 50% on fine yeast in French barriques, 50% in concrete tanks, also on fine yeast.
