Tasting note
On the nose, light aromas of brioche and yellow fruits. Great freshness and acidity on the palate, the perlage is wonderfully integrated and mousses finely on the palate. Long finish and good structure.
Culinary recommendation
Ideal as an aperitif, with oysters, fish carpaccio, scallops, delicious vegetarian appetizers or mild goat cheese. Also great with sushi, tempura or asparagus risotto.
Vinification
Traditional bottle fermentation in stainless steel tanks and wooden barrels. 2 g/l dosage.
