Vinification
With Bioma, Niepoort wants to offer a vintage sports wine that is based on the 1970s style, when port wines were shipped in small barrels and bottled in England. The grapes, together with all the stems, are worked with their feet in large granite stone basins. After enrichment with brandy, the wine rests in winter. In spring, it is filled into 550 liter barrels, where it matures for three years until bottling.
