At a gala dinner every year, the various barrels are tasted blindly. The best cask is bottled as a single-varietal wine. Il Prescelto! Ruby red, the nose shows intense cherry, plum and tobacco notes. On the palate, Merlot, limited to 300 bottles, is dry, balsamic, with ripe tannins.

Vinification
Maceration time of 15-20 days in Tonneaux. Aging for 36 months in various French oak barrels.
