About the wine

With his family in the south of France, Dominik Benz was able to realize their dream of owning their own winery. After a career in IT, he trained as a winemaker at the Schloss Salenegg winery in Maienfeld GR. In 2012, he successfully completed his training and began a new job at Agroscope Wädenswil, in the wine research sector. Dominik grew up in Zurich and most recently lived in Wädenswil. He moved to France at the end of September 2013 just in time for the first harvest. Here he was able to lease vineyards in Ariège from the Domaine du Ribonnet (Moulin de Beauregard). A new cellar and an apartment had to be built. He now owns the vines of Christian Gerber (Ribonnet) and those of Cavino's first winemaker Ernst Wirz, with whom we worked together for 40 years before he died in 2020 due to age. For Cavino, it is a pleasure to be able to offer another, innovative winemaker in Ariège with Dominik Benz. All wines impress with their very high quality and simplicity. Benz vinifies Syrah, Merlot, Cabernet-Sauvignon, Nebbiolo, Chardonnay and Tannat from the three vineyards Moulin de Beauregard and Moulin à Vent in Fossat in the Lèze Valley. The domain is certified organic.
