Tasting note
A Barbera DASti DOCG Superiore that stands out for its elegance and complexity. The wine is grown on sandy soil and surprises with its depth and at the same time directness. It opens with notes of licorice and tar, ripe plums, pickled cherries and ends with nougat on the palate.
Culinary recommendation
Goes well with stews and red meats.
Vinification
Whole berry fermentation with maceration for approx. 12 days, aging: 12 months in barriques and tonneaux then 12 months in 400L clay barrels. A further 6 months of bottle aging.
