Tasting note
Deep red, spices and ripe fruit on the nose, full and expansive on the palate with infinite length.
Culinary recommendation
A wine for big occasions, it goes very well with red meat or venison dishes and aged cheeses.
Vinification
Manual late harvest in small boxes, gentle stripping, maceration and fermentation on the skins for 7-8 days. It is aged for two years in new barrique oak barrels. The Bionzo is only produced in peak years and is limited to 2000-3000 bottles.
