Tasting note
This Barbaresco has a clear garnet red color. The nose is dominated by aromas of ripe plums, red berries, dried flowers, violets, licorice and sweet tobacco. On the palate, the wine appears ethereal and rich in finesse with dark fruit aromas, lots of spice, some cedarwood and mint, an animating acid structure and firm, easily noticeable tannins. An extremely spicy and elegant Barbaresco with great storage potential.
Culinary recommendation
Goes well with stews, game, hearty meat dishes, pasta and cheese.
Vinification
The Nebbiolo grapes come from the “Serraboella” vineyard in the municipality of Neive. The vines were planted in 1969 and are rooted facing south at 280-300 meters above sea level on a calcareous and sandy clay soil with a 30% slope. All vines are cultivated according to organic guidelines. After handpicking, the grapes are destemmed, carefully mashed and fermented in oak barrels using natural yeasts. The wine is aged for two years. The Nebbiolo grapes come from the “Serraboella” vineyard in the municipality of Neive.
