Tasting note
Sparkling ruby garnet Varied on the nose with notes of sour cherries, some thyme and coriander. Very precise in approach and flow, opens with fine-meshed tannin, very concentrated in structure, robust and firm in the finish, sweet melt in the aftertaste.
Vinification
Fermentation takes place in steel tanks with spontaneous yeasts, and the must is in contact with the peel for up to 30 days. Then aging for 12 months in 300-liter French oak barrels (50% new), then for a further 12 months in 2500 liter barrels.
