Tasting note
The aroma is delicate, aromatic and slightly yeasty, the taste is harmonious, dry and with medium fullness. Persistent and fine perlage.
Culinary recommendation

Vinification
Harvest by hand in mid-September, light pressing with short cold maceration of the berry skin. Fermentation in steel tanks at 18/19°C with selected yeasts. The young wine rests on the lees for a few weeks, followed by a second fermentation at 18°C for 20/25 days. Tartar stabilization and bottling.
