Tasting note
The Asomo — formerly known as Figuero 4 — is guaranteed to make everyone happy! It is complex but not complicated, shines with fruit and spice and is slightly kissed by wood. A convivial drink with aromas of blackberry, vanilla and a spicy touch. It is extremely juicy, concentrated, but not heavy. In the finale, red fruit and dark chocolate.
Culinary recommendation
Goes well with paella, lamb fillet with herb jus, crispy oven-baked chicken, mussels au gratin, stews with legumes.
Vinification
Completely destemmed, long mash fermentation, fermentation at low temperatures, pumping over the pomace hat.
