About the wine
Original, authentic, natural and precise. This is how the Valdonica winery, which has been certified organic since 2012, can be described in short form. In addition to Vermentino, 11 different Sangiovese clones were planted in volcanic soils, where artificial fertilizers, herbicides and other chemicals have never reached before. Irrigation... Bad news. Instead, dedication, passion and craftsmanship, which result in very pure, straight-lined wines without any frills.
Tasting note
Color ruby, fragrant nose, sour cherries, currants and cinnamon. Juicy body, soft, spicy and with good length.
Culinary recommendation
Goes well with tagliata di manzo with parmesan
Vinification
The wine is fermented in steel tanks with local, wild yeasts and aged for 10 months.
