Tasting note
Brilliant straw yellow. On the nose, clear fruit notes are combined with a subtle yeast tone. Present on the palate, balanced, with beautifully integrated perlage and a refreshing, well-balanced acidity. Delicate, elegant, but with good persistence.
Vinification
The base wine is vinified partly in barriques and partly in steel tanks. The bottle fermentation and aging on fine yeast of Arcadia Extra Brut takes 36 months.
