About the wine
Fabien Jouves, in his early thirties, less than 10 years in the cellar, is already considered a star. After studying in Bordeaux, he took over the reins at home, switched to biodynamics and returned to a more traditional, fruity-mineral style. The style in Cahors has become Bordeaux-esque in recent years, and the wines have lost their identity. Success was not long in coming, the soils and, as a result, the wines got better from year to year.

Tasting note
Very dark and earthy on the nose: cassis, blackberries, black cherries and olives. A lot of spice, minerals in the form of scorched earth, crushed stone. Lots of herbs, like a Chateaneuf du Pape. The palate is densely structured, lots of tannin, power and power. Yet balanced, ending extremely salty. Bring on the pigeons and the Périgord truffles!

Vinification
Fabian's work in the vineyard and in the cellar goes beyond biodynamics. For example, it also injects copper far below the permitted limit. With a lot of hard work, he builds up biodiversity in his vineyards. He is concerned with the natural balance — in the soils and in the wines. That's why he doesn't do a green harvest, which he regards as a brutal intervention. Some of the wines are destemmed and fermented spontaneously. Expansion in amphorae, a vessel that promotes thermal movement and thus promotes expansion on fine grounds. Bottling with minimal addition of sulfur, no filtration and fining.
