About the wine

Fabien Jouves a young savage? You could think so, but primarily a young person of victorious youth, and independence. Mas del Périé is anything but a provocation; rather, in 2009, barely in his mid-20s, Fabien took over the 12-hectare estate south of Cahors from his parents, questioning everything and making many new things. Mas del Périé today stands for natural winemaking and wines, without a constricting corset, biodynamic, complete absence of additives in the vineyard and cellar, and these wines have something divine, delicate, represent happiness and peace, nature here resembles a harmonious, untouched and not an untamed, wild place. Tasting note
Funky disco - soft, groovy, love, pain, rude, sexy, already that soulful, plush, bright, red juicy fruit, soft, lots of heart, creamy, yeasty, and that bitter pain, ethereal, herb. Groovy on the palate, everything is still floating here, this longing bright red fruit and this bitter unreachability of dreams, in the soft red fruit the chalky, earthy tart minerality is bubbling, as if combined in a frenzy, dances on the precipice, electrifies and floating. All Fabien Jouves, so much heart, so much soul, so electrified!
Vinification
Very selective reading by hand. Fermentation of juice (“saignée”) released only by own weight, without pressing, with the vineyard's own yeasts in cement tanks and wooden barrels, aging on the yeast for 6 months in stainless steel tanks and oak barrels. No fining, easy filtration, minimal use of sulfur
